Pretty Easy Tiramisu


I have wanted to do this recipe for soooo long. Finally came around to it. 

Who doesn't like a good soft tiramisu?? But it needed to be simple, and this recipe is a winner, although for sure it took more than 10 minutes, more like 30 or 40 minutes.

INGREDIENTS:

-250 ml of heavy whipping cream.
-250 grms of mascarpone cheese.
-3 tspoons of white sugar.
-1 teaspoon of vanilla extract.
-4 teaspoons Bailey's liquor.
-1/2 half a glass of coffee.
-About 20-25 ladyfingers.
-1 spoonful of cocoa powder.








STEPS:

1. Whip up the heavy cream in a bowl with the electric hand mixer until it is fluffy and big with peaks.
2. Now add the 3 teaspoons of white sugar and the vanilla extract to the cream.
3. Add the mascarpone cheese and mix with cream with the electric mixer, set apart and make sure it tastes sweet. You will have created a nice mousse like the one in the photo.
4. Start placing the ladyfingers in coffee and the liquor. The Bailey's liquor or another one gives it a special taste and coffee is a very important ingredient in Tiramisu. Give them a quick dunk, do not let them sink them forever cause they will get mushy.
4. In some kind of mold, whatever you think is going to work on, start placing the coffee wet ladyfingers close to one another until you build the first layer.
5. Now add a layer of the mousse on top and cover well.
6. Add another layer of coffee ladyfingers and another one of mousse until you have about 2 or 3 layers of ladyfingers and a final layer of mousse. I did three layers.
7. Now sprinkle the cocoa on top with a sieve.
8. Let it sit in the fridge for 3 hours until it all comes together. 

So good, and so simple. A great recipe to bring to anyone's home for dessert.

Corn Confetti with Bacon

Super fun American summer recipe! 

I loved it. I thought it would be quicker but with all the chopping in little dices it took a bit of time, but not that much. The recipe I followed was this one. You can obviously do variations and it works but I would say do not add too much green pepper cause it changes the game entirely, you want to keep it all sweet.


INGREDIENTS

-4 fresh corn on the cob.
-1 red pepper.
-1/2 half green pepper.
-1 medium white onion.
-200 grms of bacon cut up in dices.

STEPS

1. Fry up the bacon first of all. Make it crispy and brown. Separate and degrease with paper towell. Clean your pan a little with paper towell.
2. Dice up the onion in little squares. And fry them with a little oil till they are soft and traslucent. 
3. Add diced up peppers to the onions. Sautee them a little but not too long because you want them to be still a bit crunchy and not too soft.
4. Now cut up the corn from the cob with a knife. Self-explanatory with the picture and now add the corn to the pan and cook it for about 5-10 minutes till it is a bit cooked but STILL crunchy! very important.
5. Finally add the beautiful bacon and give it all a good stir.

That is it! You can eat it cold or warm. It is delicious. Just season with pepper if you want. And as my friend Tep says....everything is better with bacon.  :)

Natalie Portman's Potato and Beet Salad



Kenton and I have loved this salad this summer. I have no idea how many times I have done it already! Many. 

I found the recipe in Natalie Portman's Instagram. So easy and yummy and refreshing. 

INGREDIENTS:

- 500 grams of small potatoes.
- 2 or 3 beets (already precooked).
- 1 tablespoon of whole grain mustard.
- 3 teaspoons of sweet pickles in little dices.

- some of the  juice of the sweet pickles.
- 1 finely chopped green onion or shallots  chopped.
- some red vinegar or something similar.
- olive oil.
- salt and pepper.


STEPS:


1. Boil potatoes for 20 minutes.
2. Dice up potatoes and beet into cubes.
3. Put dressing together, and for that you have to mix the ingredients above. 
3. Let it cool off in the fridge.

Perfect for picnics and for filling you up during the summer. Super refreshing, easy and colourful!

Spicy Mince Beef Shakshuka

Shakshuka this, Shakshuka that. It is everywhere these days, isn't it? 





A classic from Israel, served for breakfast, lunch, all ingredients that you have at home, nothing fancy.

But I wanted a recipe that would be filling because cooking a side dish that would leave you hungry with just eggs in my mind it's a bit of a....better said, total waste of time. 


So I googled: meat shakshuka and there all kinds of recipes came up. So I tried this one that looked interesting and with a bit of an african kick and it was so good and not hard.  Here it is:






INGREDIENTS

-500 grms of beef minced.
-half of a yellow pepper.
-half of a green pepper.
-half a red pepper.
-1 small onion or half a big one.
-5 big tomatoes or one can of 500 grms of whole peeled tomatoes.
-1 big garlic clove or at most 2.
-some tomato paste or tomate frito (100 ml).
-1 tsp of sugar.
-4-5 eggs.
-some mozzarella cheese or melty cheese.
Spices:
-1 tsp. of coriander.
-1 tsp. of chili powder.
-1 tsp. of paprika.
-1 tsp. of cumin.
-1 tsp. of chili flakes.
-black pepper and salt.
-some chickpeas (optional)
-some spinach (optional)
-some green onions (optional)

STEPS:

  1. Dice up the onion, the bell pepers and sautee with olive oil for 2 mins.
  2. When they have cooked a little, add the meat and all the spices. The trick is this step because the mince here gets all the yummy spicy flavours. 
  3. Sautee a little, and add the garlic diced up, here you can put even more spicy peppers.
  4. Add the tomatoes and the tomato paste and a teaspoon of sugar to compensate for the acidity of the tomatoes, and let it all simmer for 10-15 minutes until it all blends nicely, cover a little and then uncover so that the water evaporates. If they are natural tomatoes you will have to break them a little with the spoon.
  5. Now add all the extra ingredients that should be done in no time, that is the green onions, chickpeas, and spinach. (I added all this because I wanted a big meal and not have to cook for 3 days basically).
  6. At this point if you have too much liquid try to evaporate it a little by elevating the fire stove, but be careful not to burn the food.
  7. Now make a little whole for the eggs in the saucepan, crack them and deposit them in the space you have made. I had space for 4. Cover so that the eggs cook fully.
  8. In the spaces in between I put a little mozzarella cheese and worked incredibly well.
  9. And now decorate with coriander leaves, or chives or whatever green herb you may have.
  10. Now let it all sit 10 minutes before you eat it and it will all come together. 

So easy! I think it was all a total 30 minutes and the flavour was awesome spicy but also sweet, soft with the mozzarella,  delicate with the eggs, and hearty with the chickpeas. YUM.

Chickpeas Simple Summer Salad



Great salad recipe for summer.  
I like to garnish it with potato crisps. Perfect for picnics and super refreshing. 

INGREDIENTS

- 400 grms of chickpeas. 
-1/2 green pepper.
-1/2 red pepper 
-A little diced onion. 
-One lemon. 
-Red vinegar..
-Olive oil and salt.
STEPS

No steps to this recipe other than dice up the peppers and onion and mix together the dressing.

I love it, reminds me to salads in Morocco like the picture.
