Pretty Easy Tiramisu


I have wanted to do this recipe for soooo long. Finally came around to it. 

Who doesn't like a good soft tiramisu?? But it needed to be simple, and this recipe is a winner, although for sure it took more than 10 minutes, more like 30 or 40 minutes.

INGREDIENTS:

-250 ml of heavy whipping cream.
-250 grms of mascarpone cheese.
-3 tspoons of white sugar.
-1 teaspoon of vanilla extract.
-4 teaspoons Bailey's liquor.
-1/2 half a glass of coffee.
-About 20-25 ladyfingers.
-1 spoonful of cocoa powder.








STEPS:

1. Whip up the heavy cream in a bowl with the electric hand mixer until it is fluffy and big with peaks.
2. Now add the 3 teaspoons of white sugar and the vanilla extract to the cream.
3. Add the mascarpone cheese and mix with cream with the electric mixer, set apart and make sure it tastes sweet. You will have created a nice mousse like the one in the photo.
4. Start placing the ladyfingers in coffee and the liquor. The Bailey's liquor or another one gives it a special taste and coffee is a very important ingredient in Tiramisu. Give them a quick dunk, do not let them sink them forever cause they will get mushy.
4. In some kind of mold, whatever you think is going to work on, start placing the coffee wet ladyfingers close to one another until you build the first layer.
5. Now add a layer of the mousse on top and cover well.
6. Add another layer of coffee ladyfingers and another one of mousse until you have about 2 or 3 layers of ladyfingers and a final layer of mousse. I did three layers.
7. Now sprinkle the cocoa on top with a sieve.
8. Let it sit in the fridge for 3 hours until it all comes together. 

So good, and so simple. A great recipe to bring to anyone's home for dessert.

Lazy Marinera Pasta



Back to cooking! 
Lost count of the last time I wrote here.  But much has happened:

1. I got married!!!
2. I planned a wedding!!!
3. I made it happen!!!

Boy that was SO much work. Anyone that has planned a wedding knows that what I am saying is true. A wedding is crazy work but worth it cause it's once in your life and then you have memories forever.

To my point, I realized that I have abandoned cooking, one of my joys in life. So I have been looking at new recipes to spice up my life, I should say here, our lives.  So I am back readers to keep discovering new flavours and make life more fun since we have to eat everyday.

So here is a lazy recipe that I do when I only feel like boiling pasta but becomes a substantial and tasty dinner, "pasta marinera" I call.

All you need is:

Ingredients
-500 grams of pasta.
-3 cans of tuna.
-2 cans of mussels
-750 grs of peeled tomatoes made puree. (tomates triturados).

So this is all you need, you throw that all together when the pasta is boiled, and voila, you have a great tasty meal. The tomato sauce works incredibly well with these fishy flavours. Kenton was even impressed by how good it all tasted.

Basic Bruschettas



Tonight I had bruschettas. 

I confess: I saw in Julie&Julia the movie about two weeks ago, and tonight I had to try it.

So easy, tasty, crunchy, heatlhy and good! you'll love it and will use up all your pan duro! cant beat that....it is perfect for a summer night.

INGREDIENTS:


-French bread, old bread is fine.
-Olive oil
-1 garlic clove.
-1 tomato.
-1/2 red pepper
-Some olives (optional)
-Lots of basil (this is the key ingredient, it is soooo good)

STEPS:


Toast the bread with olive oil in a pan.
  1. Once toasted, get the garlic and rub it to the toast to give it flavor. 
  2. Cut up the tomatoes in dices, chop the basil finely, and the olives and add peppers on the pan and slightly roast them.
  3. Mix it all up in bowl with a little salt and then place on the toasts...put a little bit of olive oil over the top and you're done. 
  4. Voila! amazing dinner pretty fast.

ensalada de mozzarela, albahaca y tomates

Esta ensalada es perfecta para el verano. Refrescante y sana. La albahaca fresca es el ingrediente clave (basil in english).

  • Algunas hojas de albahaca fresca.
  • Tomates cherry o normales cortados en trocitos.
  • Queso mozarella.
  • Aceite de oliva.
  • Sal y pimienta.
  1. Poner todos los ingredientes en un bol y aliñar. 
  2. Servir con varias rodajas de pan al lado para mojar luego en el aceite que sobre.
Esta receta está muy buena....es simple y muy muy refrescante para cuando hace calor. Pruebala.

Otra buena idea es derretir todo en el horno: los tomates, la mozzarealla y la albahaca. Lo pones en el horno 15 min y luego lo pones derretido en el pan. Muy rico para las noches de invierno.
